"Cottage cheese dumpling curry"

Cottage cheese dumpling curry:

 !! COTTAGE CHEESE DUMPLING CURRY (ଛେନା ତରକାରୀ) !! FROM MOM'S KITCHEN🥰

INGREDIENTS:
🥛1 lit milk
🍶2 tsp vinegar
🍚1tsp maida
🌶️Spices ( cardamom, cinnamon, cloves, dry red chilli, bay leaves)
🧅2 medium sized onion ( paste)
🧄1 tsp Ginger garlic paste
🍅1 chopped tomato
🥗1/2 tsp coriander powder
🌶️1/2 tsp cumin powder
🌶️1/2 tsp garam masala
🌶️1/2 tsp turmeric powder
🌶️1/2 tsp red chilli powder
🥔2 large potato (cubed)
🥗fresh Coriander leaves

RECIPE:
👉Boil milk in a big container. Once the milk comes to a boil, lower heat and boil for another couple of minutes. Add vinegar and stir continuously. When milk starts to curdle stop stirring. Let it heat for 5min on medium low heat. Switch off the gas, wait for 5 min and pour curdled milk to a sieve. Run the sieve under running tap water and carefully wash the chhena.Then press chhena gently to drain as much water as possible. Keep it rest for some time in that sieve ( to make chhena dry ).
👉Add maida. Knead the chhena with the heel of your palm till smooth and soft. Take 1/2 tsp of chhena and make small ball ( you can give any shape🤪). There shouldn't be any crack in ball. Slightly flatten it. Repeat this with rest of the chhena.
👉Heat oil in a pan, add chhena balls in batches ( don't overcrowd the pan ). When the balls rise up and start to float, lower the heat and cook the balls till nice golden brown in colour. Repeat for rest of the balls. Remove the balls and then add cube potatoes. Fry them till golden in colour.
👉In another pan add oil. When hot, add all the raw spices. Let them splutter and aromatic. Add onion paste and fry. When onion starts browning, add ginger-garlic paste. Fry it till raw smell gone. Add chopped tomato, cook till soft. Add all the spice powder except garam masala. Fry till everything is mixed well and oil starts to separate.
👉Add potatoes, fry for 5 mins. Add enough water for the gravy. Cover and let it come to a boil. Add the chhena balls to the gravy, add garam masala and cook for 5 mins. Then switch off the gas and sprinkle fresh coriander leaves. Now your dish is ready 🍲😊
